Focusing on the unique climate and culture of Shiga Prefecture, home to Lake Biwa, Omi Kaiseki cuisine is prepared using only ingredients specially sourced from Shiga Prefecture, including lake delicacies, wild produce, rice field harvests, fermented foods, mountain delicacies, game meat, and Omi beef.Based on the traditions of Japanese cuisine, we strive to create original dishes that cherish the changing seasons, and to find the perfect pairings with tea, local sake, and wine from Omi.

Omi Kaiseki

Aperitif: Cherry blossom liqueur

Appetizer: Clove-shaped gluten, red konjac with vinegared miso sauce, green onions, and turban shell.

Appetizer: Pickled ginger, marinated moroko fish in sweet and sour sauce

Broad bean, lily petal

Bracken and Yawata konjac salad with white vinegar dressing, cherry leaf sushi

Simmered butterbur and sansho pepper, duck breast, and a single cherry blossom.

Bowl of cauliflower and soy milk tofu in a light kudzu starch sauce.

Carrot petals, icefish, bracken, tree buds

Sashimi: Today's seasonal fish, with side dishes

Grilled dishes: Grilled roe-covered moroko fish, grilled bamboo shoots with sansho leaves.

Medium plate: Wild vegetable tempura, Aralia sprouts, strained oil

Warm dish: Uzuki Nabe (April Hot Pot) - Natural Eel, Moon Bear, and Sansho Pepper Hot Pot

Vinegared dish: Spring Tosa vinegar jelly with asparagus
