Aperitif Shirozake

Appetizer: Thin tofu, shrimp, and butterfly carrot

Roe mochi simmered with Japanese pepper and hishi egg

Three-colored dumpling sushi with egg and paper lantern

Omi duck loin with kinome dressing and a single peach

Bowl: Steamed bamboo shoots and Japanese pepper, icefish, and carrot petals
